What meat should I use?

For Birria, our favorite cut is chuck roast — it becomes perfectly tender and flavorful. That said, many different meats make incredible birria! We have customers who even use it with game meats with amazing results.

If you're using a leaner cut of meat, we recommend substituting 2 cups of the water with bone broth or vegetable broth to add extra richness.

For our Chipotle Bomb, we especially love it with chicken or pork. It’s perfect for tortilla soup, tinga-style chicken, lomo enchilado, burritos, bowls, and more!

Is it gluten free?

Does it contain MSG?

NO. Our blends are made with simple, quality ingredients and contain no added MSG.

How spicy is it?

Spice is personal 😉 but here’s a helpful guide:

  • Mild Birria = Mild
  • Medium Birria = Medium
  • Chipotle Bomb = Medium

The Chipotle has a warm, smoky heat that builds gently but isn’t overpowering. The heat is almost undetectable when not served as a soup base or salsa.

Is it hard to make?

Not at all! It’s incredibly easy. Just add meat, add water, and slow cook. That’s it.

How much meat should I use per heart?

For Birria:
We love using 3 pounds of meat + 4 cups of water + 1 bomb. This gives you the perfect meat-to-consommé ratio.

For Chipotle meat (chicken or pork):
You can use up to 4–5 pounds of meat + 4 cups of water + 1 bomb.

For Tortilla Soup (Chipotle Bomb):
Use 1–2 pounds of chicken + 8 cups of water + 1 Chipotle bomb for a flavorful, brothy soup.

How long does it take to cook?

It depends on your cooking method:

  • Slow Cooker: 6–8 hours on low (the best for deep flavor and most tender meat!)
  • Instant Pot: About 45 minutes under pressure
  • Stovetop: 3–4 hours on a low simmer

Can I freeze the cooked birria?

Absolutely! Store your cooked meat (with or without consommé) in an airtight container for up to 3 months. It reheats beautifully.

Where does birria come from?

Birria is a traditional dish from Jalisco, Mexico!  Originally made with goat, it has evolved to include beef, lamb, and other meats. It's famous for its rich, savory, and slightly spicy flavors, often served as tacos with a side of consommé for dipping. A true taste of Mexico in every bite!
