Pork Belly Chipotle Ramen

Ingredients

    • 1 Chipotle Flavor Bomb

    • 1 lb pork belly, cut into 1-inch cubes or slices

    • 8 cups water

    • 2 packs ramen noodles (discard seasoning packets)

    • 2 soft-boiled eggs, halved

    • 1 cup sliced mushrooms

    • 1 cup baby spinach or bok choy

    • 1/2 cup corn kernels (fresh or frozen)

    • 2 green onions, sliced

    • 1 sheet nori, cut into strips (optional)

    • 1 tbsp soy sauce (optional, to taste)

    • 1 tsp sesame oil (optional)

      1. In a large pot, add pork belly, Chipotle Flavor Bomb, and 8 cups water. Bring to a boil, then reduce to a gentle simmer.

      2. Simmer uncovered for 45–60 minutes, skimming any foam, until pork is tender and the broth is rich and flavorful.

      3. Remove pork belly with a slotted spoon and set aside. (Optional: crisp pork belly in a skillet for extra texture.)

      4. Add mushrooms and corn to the simmering broth. Cook 3–5 minutes.

      5. Add ramen noodles and cook according to package directions.

      6. Stir in spinach or bok choy until wilted. Taste and add soy sauce if desired.

      7. Ladle ramen and broth into bowls. Top with pork belly, egg halves, green onions, and nori. Drizzle with sesame oil if you like.

      8. Slurp and enjoy the smoky chipotle magic!
