This Chipotle Chicken Salad is one of those recipes you’ll find yourself making on repeat. It’s fresh, hearty, and packed with bold chipotle flavor — but still comes together so simply. The magic is in the delicious, simple dressing: smoky and creamy. Toss it all together and you’ve got a salad that feels exciting, satisfying, and anything but ordinary.
Ingredients

4 cups lettuce (romaine or mixed greens)

2 cups cooked seasoned chicken, shredded or chopped

1 cup black beans, rinsed and drained

1 cup corn (fresh, canned & drained, or thawed frozen)

1 avocado, diced
-
1 tomato, diced (or cherry tomatoes halved)

¼ red onion, thinly sliced
-
Optional add-ins: shredded cheese, cilantro, sliced jalapeño, tortilla strips
Chipotle Dressing

⅓ cup Greek yogurt (or sour cream)
-
2–3 tbsp chipotle chicken broth (from the cooked chicken)
-
Lime juice to taste (optional)
-
1 clove garlic, minced (optional)

Salt & pepper to taste
Directions
Prepare chicken by cooking with a Chipotle Flavor Bomb
Stovetop: Place 2–4 lbs chicken in a pot with 6–8 cups water and 1 Chipotle Luv Bomb. Bring to a boil, then simmer 25–40 minutes (until fully cooked and tender).
Slow Cooker: Add chicken, water, and 1 Chipotle Luv Bomb to the slow cooker. Cook on LOW 6–8 hours or HIGH 3–4 hours.
Pressure Cooker: Add chicken, water, and 1 Chipotle Luv Bomb. Cook on HIGH pressure 12–15 minutes, then quick-release or natural release for 5 minutes.
Shred chicken and return to the pot.
Reserve some of the cooking liquid for the dressing— it’s full of smoky, chipotle flavor!
Build the base:
In a large bowl or plate, layer the lettuce.Add the toppings:
Scatter the chicken, black beans, corn, tomato, avocado, and red onion on top of the lettuce.Make the dressing:
In a small bowl, whisk together Greek yogurt, chipotle broth, lime juice, garlic (if using), salt, and pepper.If you like it thinner, add a splash of water or extra lime juice.
Serve:
Drizzle the chipotle dressing over the salad just before serving. Add tortilla strips or cilantro for crunch and extra flavor!
