Chipotle Chicken Salad

This Chipotle Chicken Salad is one of those recipes you’ll find yourself making on repeat. It’s fresh, hearty, and packed with bold chipotle flavor — but still comes together so simply. The magic is in the delicious, simple dressing: smoky and creamy. Toss it all together and you’ve got a salad that feels exciting, satisfying, and anything but ordinary.


Chipotle Chicken Salad

Ingredients

  • 4 cups lettuce (romaine or mixed greens)

  • 2 cups cooked seasoned chicken, shredded or chopped

  • 1 cup black beans, rinsed and drained

  • 1 cup corn (fresh, canned & drained, or thawed frozen)

  • 1 avocado, diced

  • 1 tomato, diced (or cherry tomatoes halved)

  • ¼ red onion, thinly sliced

  • Optional add-ins: shredded cheese, cilantro, sliced jalapeño, tortilla strips

  • ⅓ cup Greek yogurt (or sour cream)

  • 2–3 tbsp chipotle chicken broth (from the cooked chicken)

  • Lime juice to taste (optional)

  • 1 clove garlic, minced (optional)

  • Salt & pepper to taste

Directions

    1. Stovetop: Place 2–4 lbs chicken in a pot with 6–8 cups water and 1 Chipotle Luv Bomb. Bring to a boil, then simmer 25–40 minutes (until fully cooked and tender).

    2. Slow Cooker: Add chicken, water, and 1 Chipotle Luv Bomb to the slow cooker. Cook on LOW 6–8 hours or HIGH 3–4 hours.

    3. Pressure Cooker: Add chicken, water, and 1 Chipotle Luv Bomb. Cook on HIGH pressure 12–15 minutes, then quick-release or natural release for 5 minutes.

    4. Shred chicken and return to the pot.

    5. Reserve some of the cooking liquid for the dressing— it’s full of smoky, chipotle flavor!

    6. Build the base:
      In a large bowl or plate, layer the lettuce.

    7. Add the toppings:
      Scatter the chicken, black beans, corn, tomato, avocado, and red onion on top of the lettuce.

    8. Make the dressing:
      In a small bowl, whisk together Greek yogurt, chipotle broth, lime juice, garlic (if using), salt, and pepper.

    9. If you like it thinner, add a splash of water or extra lime juice.

    10. Serve:
      Drizzle the chipotle dressing over the salad just before serving. Add tortilla strips or cilantro for crunch and extra flavor!
